Initial guess for entropy variables in steady_vortex is invalid, leads to `nan` in residual

I would think this issue exists for other steady CFD solves. It was why entropy variables failed for my airfoil results. I think we would just need to add a step that converts the initial guess in conservative form to entropy form,
