Benchmark if byte conversion is faster

Test if converting values (mostly strings) to bytes for processing is faster that using strings.

I would assume that this only would bring any benefits if:

• log lines are directly read as bytes (rb)
• all schemas (protobuf) are changed to bytes -- this brings the drawback that you lose compatibility between different languages.
• data must not be encoded to strings -- this would lose you the performance gains you are hoping for.
• Protobuf automatically validates if the input is a valid UTF-8 string. You lose this capability by switching to bytes.

If performance is an issue, I would rather suggest to put effort into implementing specific modules with more performant languages such as Rust. This would bring much more gains than changing the type of the data.

I would not recommend changing all strings to bytestrings.
