How to sort canada data residency?

I am building a healthcare app. I have completed my MVP, but right now my concern is how I can sort the Canada data residency problem. I have read some documents and articles and found out Deepgram does not support the Canada-dedicated endpoint for STT.
Please help to sort it out. It's an early-stage startup and idea validation and verifications with some DRS.
