Neovim-specific fork: pest.nvim

Hey! I've been maintaining a Neovim-focused fork of pest.vim called pest.nvim. For now it's still a fork, but I've rewritten most of it to use Neovim-native APIs (LSP, Treesitter, etc.).

Would you be open to adding a small note in the README pointing Neovim users to it? Happy to open a PR for that if so!

@tomtau Sure, happy to merge! Just a couple of things to be aware of:

LSP is intentionally not configured: I decided against shipping a default LSP setup since it would likely interfere with the user's existing configuration, as it did with mine. Instead, I documented how to set it up in the README. This will probably conflict with the last pull request.

Tree-sitter grammar is pointing to my fork: the original repo was incomplete, so I'm using my own fork for now. I already opened a PR upstream and it's waiting on review. Once it gets merged I'll switch the URL back to the main repo.

Planned future changes: I assigned a default symbol to the language, but it makes sense to let the user configure it in the definitions if they want.

@miguelflor the tree-sitter grammar fork is this one: pest-parser/tree-sitter-pest#3 right?
hopefully @huacnlee can take a look at it (it's also used in the Zed extension, I think?)

@tomtau Yes, that's the one. I checked and the Zed extension uses it too. Once that PR is reviewed and hopefully merged, I'll send a new PR to update the commit reference and the .scm files.
