feat(traces): align spans with OpenInference semantics

Summary

• replace the existing gen_ai-style LLM and tool span attributes with OpenInference semantics for sessions, model calls, and tool calls
• capture prompt and response text on LLM spans so Phoenix and other OpenInference-aware backends can render traces more usefully
• add the OpenInference semantic conventions dependency and update span tests to assert the new names and attributes
