Escrow struct has no created_at timestamp for off-chain analytics

payment_escrow's Escrow struct stores payer, beneficiary, amount, and state but no creation timestamp, which off-chain analytics/reconciliation would find useful (e.g. "escrows open longer than N days"). Add a created_at: u64 (ledger timestamp) field.
