Update the Alpine Unit package pin from 1.36.0 to 1.36.1, which is the version currently provided by Alpine 3.24. This fixes the AMD64 and ARM64 build failures in post-merge run https://github.com/Endava/docker-php/actions/runs/34097180642. No PHP, Alpine, workflow, tag, or publishing changes.
