Staff can now mark a whole or partial dish quantity served in Captain. Service is stored separately from order quantities, payments and KOT print acknowledgements, with branch-scoped validation and compare-and-set protection against concurrent edits. Kitchen tickets are grouped by addition time and contain only outstanding quantities. A bill request clears existing rounds; later additions return with their own clock.

Kitchen display now rotates all dishes instead of permanently hiding them behind +more, preserves its last good feed on malformed responses, and times out stalled requests. Legacy tickets remain visible. Captain order history receives the same round data.

Validation: 3 MongoDB integration tests (retries, concurrent staff, branch/closed-order rejection), 6 round/display tests, 50 focused kitchen and multi-printer regression checks. Full desktop suite, full API unit suite and REST database checks passed in CI. API lint: no errors. Attribution check passed. Physical tablet, HDMI screen and printers not tested. POS 1.8.3 is for a local Windows installer; do not publish a public POS release.

Merged to develop. Anyone can test this - you do not need write access.

Try it at https://develop.posnic.io, or run it yourself:

git fetch origin develop && git checkout develop
npm install && npm --prefix api install
npm run dev   # then http://localhost:3000

When you have tested it, say what you did and what happened, and set
QA passed or QA failed. If you cannot set labels, just comment -
a maintainer will.

Reporting that something is broken is as useful as fixing it. It is
better found here than by a shopkeeper.
