Overview
Aligns deployment defaults with Socket Registry Firewall 2.15.0 and bumps the Helm chart patch to 0.11.18.

Helm: Chart.yaml appVersion and chart version, plus default image.tag in values.yaml and the documented default in helm/README.md.

AWS EKS CloudFormation: Parameter defaults FirewallImageTag and ChartVersion in firewall-eks.yaml, the example pin in values/dns-override.values.yaml, and matching references in cloudformation/README.md.

No runtime or template logic changes—only version pins and docs so greenfield installs and emitted helm upgrade --install commands target the new image/chart pair.
