RHEL went EOL in 2024: "RHEL 7: Standard maintenance ended on June 30, 2024, but critical security updates are available via paid Extended Life Cycle Support (ELS) through May 31, 2029, for version 7.9."

Description
This pull request updates and restructures the documentation for supported platforms across Chef products, with a focus on Chef Infra Client 19 and related products.
