Adds strip = true to the release profile. The 0.1.1 diffr binary is 138 MB unstripped, and Review Desktop ships it inside every install, so debug symbols are pure download weight there. Measured size after stripping to follow in a comment.

No behaviour change. Backtraces from release builds lose symbol names; the debug profile is untouched.

Measured on macOS arm64 with this branch:

unstripped 0.1.1 stripped
binary 138 MB 132 MB
gzipped 20.8 MB (release archive) 18.2 MB

So symbols are about 4% of the file, not the bulk. size -m on the stripped binary: __TEXT 135 MB, of which __const is 109 MB and __text (code) is 22 MB. The weight is read-only data, which is the tree-sitter parse tables. Stripping is still free and worth keeping, but shrinking the archive means fewer or smaller grammars, not compiler flags.

Closing: stripping saves about 4%; the size is tree-sitter parse tables, not symbols.
