Removes our Codecov integration, which has been disabled at the org level:

• Removes the coverage upload step from CI workflows
• Removes the Codecov badge from the README/docs
• Deletes codecov.yml config (where present)

Coverage is still generated and reported locally/in CI logs; only the upload is gone. The CODECOV_TOKEN repo secret can be deleted after this merges.
