Fixes #6182.

Recent ECH versions renamed the API key dialog toggle from Restrict privileges to Control security privileges. This PR aligns all remaining references in the affected docs and updates toggle action wording to match the current UI behavior.

  • Scope of doc updates

    • Updated all remaining occurrences in the issue-listed files:
      • serverless/pages/api-keys.asciidoc
      • solutions/observability/apm/grant-access-using-api-keys.md
      • deploy-manage/api-keys/serverless-project-api-keys.md
      • solutions/observability/cloud/monitor-cloudtrail-logs.md
      • solutions/observability/cloud/monitor-aws-network-firewall-logs.md
      • solutions/observability/cloud/monitor-cloudwatch-logs.md
      • solutions/observability/cloud/monitor-web-application-firewall-waf-logs.md
      • solutions/observability/cloud/monitor-amazon-web-services-aws-with-amazon-data-firehose.md

  • Terminology and UX wording alignment

    • Replaced UI label references from Restrict privileges → Control security privileges.
    • Adjusted instructional phrasing where needed from “select” to “enable” for toggle interactions.

  • Representative change

    - Enter a name for your API key and select **Restrict privileges**.
+ Enter a name for your API key and enable **Control security privileges**.

Might be worth checking if this should be backported to asciidoc docs
