fix(deps): override katex to ^0.18.2 - #261

Pin the transitive katex dependency (reached via nextra, rehype-katex, micromark-extension-math and mermaid, all declaring ^0.16.x) to the 0.18 line through the existing package.json overrides block so the lockfile resolves to a release that treats renderer options as own properties only. Verified: npm test (892 passing), npm run build, npm audit --omit=dev reports no low/moderate advisories.
