Summary: Folder reorganization and Quill evals

• Reorganized the folder based on Adnan's note here: https://docs.google.com/document/d/1Gu13_6KJYwUILjzfNoSt7Hk1-XFqJDCqRBSMjAGq8CI/edit?tab=t.0#heading=h.v8hfzpke43uq
• Reran all files to confirm that they still run
• Made minor changes when files were not running
• Also added all of the Quill evals + Intertextuality eval based on this new folder organization

• Manually tested my changes, and here are the details:
• Reran all files to confirm that they still run. Made minor changes when files were not running.
• Cross-checked the contracts across all new evaluators
