chore: replace old ory product stack images with new talos layer images

Refreshes the deployment-model artwork used across the docs UI:

• Updates the "Ory Network" sidebar CTA card image
• Updates the three deployment-model picker icons - Network, Ory Enterprise License, and Ory Open Source

Images-only change. New assets keep the existing dimensions and file sizes (picker icons at 96×96, CTA card at 230×230) so layout and page weight are unchanged.
