Updates documentation to reflect PR #4863 changes: - Changed default model from u3-rt-pro to universal-3-5-pro - Updated AssemblyAIConnectionParams table - Updated Notes section Both models are functionally identical (U3 Pro family), this is a naming update to match AssemblyAI's launched flagship model identifier.
