Adds documentation for OmniRoute, a third-party OpenAI-compatible AI gateway, to the local OpenAI-compatible providers guide.

This addresses issue #3283 by providing clear setup instructions for OmniRoute and any other remote OpenAI-compatible gateways using the standard OPENAI_BASE_URL and OPENAI_API_KEY environment variables.

The new section includes:

  • Basic setup example with environment variables
  • How to discover available model IDs
  • General guidance that applies to any OpenAI-compatible remote gateway

Fixes #3283

Nice — this closes #3283 cleanly. Documenting OmniRoute as a concrete instance of the generic OPENAI_BASE_URL/OPENAI_API_KEY pattern is useful; the "discover model IDs" step is exactly what users get stuck on with remote gateways. One nit: consider adding a note that the provider kind falls back to model detection when the base URL doesn't match a known provider, since that behavior is now wired through #3299.
