Selectarr shows fewer items than Radarr/Sonarr/Lidarr Correct — Selectarr only shows media that is actually downloaded. Monitored items without files are not shown.

I deleted something but it came back Check that dry_run is set to false in config.yaml. In dry-run mode nothing is actually deleted.

The settings page shows "Auto-discovered" for some services Selectarr found the config files of Radarr, Sonarr, or Lidarr on the same system and pre-filled the API keys and URLs. You still need to save the settings to confirm them.
