docs: preserve GWPCA plotting coordinate columns - #259

Reset the station MultiIndex before converting both plotting results to DataFrames. Recent xarray versions keep x and y only as index levels, causing the gallery example to fail with KeyError: 'x'. Add regression coverage for both conversions and verify compatibility with older and current xarray versions.
