Overview
Bumps deployment defaults to Socket Registry Firewall image 2.15.1 and aligns the Helm chart patch release to 0.11.18.

Helm: Chart.yaml appVersion and chart version, plus default image.tag in values.yaml and the documented default in helm/README.md.

AWS EKS CloudFormation: Parameter defaults FirewallImageTag and ChartVersion in firewall-eks.yaml, the example pin in values/dns-override.values.yaml, and matching references in cloudformation/README.md.

No application logic or chart templates change—only version pins and docs so fresh installs and stack-emitted helm upgrade --install commands target the new image and chart.
