…2619) Adds `schema.SyntheticPairs` and `schema.SyntheticRecords`, which build equivalent populated, null, empty-collection, nested and escaping values for an old and new Arrow field, or return `schema.ErrUnableToCompare` when none exist (consumed by cloudquery/filetypes#784). Fixes https://linear.app/env-zero/issue/ATH-942/add-shared-synthetic-record-helpers-to-plugin-sdk

parquet.Client.ParquetSchemato get the generated Parquet schema for a table without writing, andparquet.Client.AssessTableto report added, removed and changed fields with exact Parquet types as File schema/output changed or No destination schema change, pinning plugin-sdk to cloudquery/plugin-sdk#2619 for the finding types.Fixes https://linear.app/env-zero/issue/ATH-943/compare-generated-parquet-schemas-between-source-versions-in-filetypes
