Adds `parquet.Client.ParquetSchema` to get the generated Parquet schema for a table without writing, and `parquet.Client.AssessTable` to report added, removed and changed fields with exact Parquet types as File schema/output changed or No destination schema change, pinning plugin-sdk to cloudquery/plugin-sdk#2619 for the finding types. Fixes https://linear.app/env-zero/issue/ATH-943/compare-generated-parquet-schemas-between-source-versions-in-filetypes
